Common in street food, fish include Rohu, Roopchand, Mackerel, Seer, and Shrimp lacked that one element that makes it memorable. Though there was plenty of oil, the fish tasted charred and bit acidic, which ran counter to the spice mix. The masala, or spice mix, was surprisingly the same across all the dishes, hence there was no opportunity to differentiate the several fish species.
The seasoning wasn’t meant to compliment any one kind of fish, hence even though I know many kinds of fish have unique flavours, I was anticipating for a more complicated dish. Madhan Fish Tawa Fry is apparently well-known not for its extraordinary cooking skills but more for the lack of actual competition.
Though I was let down, the residents’ excitement over Madhan Fish Tawa Fry made me question whether their tastes varied from mine. It might be a fun project if you are open to learning new street foods and ready to give up some of the more exact methods.
